I’m sure I have said it before a hundred times, but I guess I’ll keep saying it- we really love salads of all kinds around here, like this beautiful yet simple apple salad recipe that I have here for you. In fact, one of my favorite things to do in the kitchen is to concoct a new dressing or style of salad to enjoy. Some people tell me that making salad sounds pretty boring and limiting but I find it liberating to say the least! When I can create a salad that has scrumptious textures, exciting flavors, and exotic flair then I know life is really good!
The other day I was trying to figure out what to do with the last couple of apples that were becoming neglected and I thought about an apple salad recipe that Dara Dubinet and Penny Shelton put together in one of their recipe eBooks over at Raw Food Rehab. I couldn’t really remember the recipe so I used the thought as inspiration and came up with my own apple salad recipe. I think it’s delicious and something that would be a big hit at a potluck or even for a special occasion. Or, you could just enjoy it any old time like I do!
Here’s What You’ll Need For This Apple Salad Recipe:
- 2 apples, chopped with skin left on
- 2 stalks celery, chopped
- ¼ cup red cabbage, chopped (optional)
- ½ cup kale, chopped
- 1/8 cup fresh mint, diced
- Juice of ½ to 1 lemon (depending on how tart you like it)
- Juice of ½ an orange
- 1/8 cup buckwheat, sprouted and dried
Simply mix the apples, celery, red cabbage and kale together in a medium size bowl. Squeeze fresh lemon and orange juice on top of the food and give it a quick mix. Next, sprinkle the mint and buckwheat on top and gently fold it into the salad. The buckwheat gives this apple salad recipe a nice extra crunch, but it certainly does not inhibit the flavor if it isn’t added. If you want a crunch without using buckwheat consider using crushed almonds or walnuts instead.
