Kale is one of the biggest powerhouses out there when it comes to nutrition. It packs a huge punch of antioxidants; it’s high in iron, and its super low in calories. It also offers plenty of fiber, calcium, and vitamin C. Kale does tend to come with a somewhat bitter taste that leaves people, well, bitter about having to eat it in the raw.
The good news is that all it takes is a few key ingredients to turn this green veggie with a bite into a sweet and savory yet tangy delight that you wouldn’t mind eating every single day.
The following kale salad recipe is easy to make and doesn’t require any fancy ingredients that you’ll have to look all over for in order to find. A bowl, a cutting board, and a knife is all you’ll need to get this salad rawkin’ and rollin’!

For the Salad:
- 1 big bunch of kale, any variety
- 1 cup shredded red cabbage
- 2 apples, finely diced
- 2 stalks celery, finely diced
- 1/8 cup currants or raisins
- 1 Tbsp sesame seeds
For the Sauce:
- Juice of 1 orange
- Juice of 1 lemon
- 1 clove garlic, mined or finely chopped
- 1 Tsp red pepper flakes (optional)
- 1 Tsp EVOO (optional)
For the Topping:
- ½ avocado, chopped in to small pieces
- ½ cup sunflower sprouts (optional)
Wash the kale and cut the leaves into bit size pieces. Toss the kale and cabbage together in a big bowl and add the apples, celery, currants, and sesame seeds.
Stir the sauce ingredients together in a small bowl until well combined and the toss it with the salad until everything is coated. Let the salad sit for about 15 minutes so the flavors can intensify and then serve on 2 large plates, topping each salad with ¼ of a diced avocado and a ¼ cup sunflower sprouts.
