I truly believe in having your ice cream and eating it too… otherwise what’s the point in living?!
After living off grid for awhile and out of a cooler, the first thing I did when I got access to a freezer was throw some sliced bananas and mango chunks in there overnight. I was planning on eating it the following evening but I couldn’t stand the suspense when I woke up the next morning. So by 8am I am indulging in breakfast bliss.
There really is no recipe here- I threw about 2 cups of frozen sliced bananas and 1 cup of frozen mango chunks into the food processor and let it go. I did have to stop and push the mixture down couple of times but after just a couple of minutes I had a beautiful creamy treat that I simply couldn’t get enough of. It is creamier than your average ice cream but it isn’t runny (the pics below don’t do it justice!) I topped the ice cream with shredded coconut, goji berries, and cacao nibs.
The goji berries freeze up and are like little candies in the ice cream… it really is to LIVE for! I’ve been eating different versions of this for breakfast for almost 2 weeks now, hehehe. I have tried papaya, peaches, strawberries, and cantaloupe. I can’t choose a favorite. Check out the finished product:
