These tasty bars were the result of simply throwing a bunch of things in the food processor that sounded good, and hoping that it came out alright. I have to say that even though these raw vegan energy bars are super low in fat (nut and seed free!), they are some of the best I’ve ever tasted, and they’re a lot less expensive than the store-bought variety. They also hold up well so you can make a batch to enjoy for the entire week. If you live with others, you’ll want to double this recipe if you expect the bars to last longer than a day or two! Here’s What You’ll Need (Makes 8-10 bars):

  • 25 deglet noor dates, pitted (you can use any kind of dates but remember that medjool are bigger!)
  • 10 dried black mission figs
  • .25 cup dried cherries
  • .5 cup dried mulberries
  • .25 cup dried shredded coconut
  • .5 lime
  • Zest of .5 lime (only if organic)

Place the pitted dates in your food processor and pulse until they get soft and sticky. Add the lime juice, zest of the lime, figs and mulberries and pulse again until well combined. Place the mixture into a bowl, adding the cherries and coconut. Using a spatula, a spoon, or your hands, make sure that everything is mixed together really well. Separate the mixture into 8-10 small pieces and shape them into your desired shape. Bars are great, but so are bite sized energy nuggets!
