This is one of the easiest dishes to put together! It’s filling, it is beautiful and it’s really fresh. All you need is cucumbers, apples, a lemon, and an orange. To kick it up a notch throw in some fresh basil or mint (or both!) and you have a kick ass meal for home or on the go!
Here is what to do:
Thinly slice a couple of apples and a cucumber then cut them in to bite size pieces. Toss the fruit in a bowl and squeeze the juice of one lemon and an orange on top then toss generously. If you like, add some freshly chopped mint, basil, or both! You can even top it with some hemp seeds (as shown in the picture) for a little extra protein. You are going to love this one!
