Live Life in Delicious Abundance!

I’ve been super busy trying to finish my recipe eBook for the site here on RAW High Life – which has been in the works for almost two years now! Working as a full time freelance writer doesn’t afford me much spare time to work on these things.

And I’ve been splitting my spare time between marketing my writing services, creating the recipe book (which is all about enjoying cooked vegan food while infusing your day with fresh raw produce), and building my product line for EcoGlow, which is an earth friendly and cruelty-free beauty line I’m going to launch in the coming months.

So, needless to say, I haven’t had a lot of time in the kitchen to experiment. I’ve been living off of banana smoothes, homemade energy bars, and quick fruit and veggie snacks for weeks now. But I did manage to put together a raw vegan blood orange and berry frosting the other day, and I realized that I had some leftover yesterday morning so I committed to using it during snack time.

Well, after grubbing on a finger full of the stuff, I knew it wouldn’t make it until snack time. I used it for breakfast instead! I create these yummy and gooey cinnamon apple stacks and then topped them with the frosting… so delicious! The meal was light, crisp, and juicy with a luxuriously silky component that made me lick my lips in thought of the meal all day long yesterday.

This is impossibly easy, so it’s kind of embarrassing to post it as a recipe, but I think you’ll enjoy the simplicity of it. So without further ado, here is how to make your own raw vegan gooey cinnamon apple stacks with blood orange berry frosting:

Gooey Cinnamon Apple Stacks with Blood Orange and Berry Frosting

Ingredients

  • 3 apples
  • 5 medjool dates
  • 1/4 tbsp water
  • ½ tsp cinnamon
  • 2-3 tbsp raw vegan blood orange and berry Frosting

Instructions

Blend the dates, water, and cinnamon together until well combined – it should turn into a gooey paste. Set aside.

Core your apples and then thinly slice them so you have a couple handfuls of apple discs.

Place a slice of apple on a plate and then spread the date paste over it. Put another slice on top and spread date paste on it too… maintain this process until your stack is as high as you want it!

Add a huge dollop of blood orange and berry frosting on top, and enjoy.
