Most people I know and meet baulk at the idea of vegan chili, let alone chili that has been made in the raw… but in my opinion raw vegan chili is better than any cooked chili I’ve ever had! I’m not sure exactly why this is the case for me. But it might be because all of the different flavors like, cumin and chipotle, are distinct from one another which always makes for a huge party in my mouth! I love being able to identify and savor each flavor as my taste buds come into contact with them.
While I do enjoy a great cooked veggie chili, the flavors tend to meld together a lot more so all I taste is something… good – great even. But raw vegan chili is extraordinary in terms of flavor, texture, and the minimal prep time it requires. Raw vegan chili is the perfect meal any time of year because it keeps you chill during summer months and offers a hardy meal option during winter months.
